In August 2021, "Biriyani Osawa," a biryani specialty restaurant,<br>opened its doors in Kanda, Tokyo. Helmed by owner-chef Takamasa<br>Osawa, this restaurant offers, what he claims is, the ultimate<br>biryani. The menu is exclusively biryani, a testament to the<br>restaurant's singular focus. Each dish is meticulously crafted,<br>capturing the essence of biryani that only large-scale preparation<br>can achieve, and hinting at new possibilities for this beloved<br>dish.

Our menu is centered around Mutton Biryani. On select days, we also<br>serve Chicken Biryani. Depending on ingredient availability, we may<br>feature unique offerings like Oyster, Hairy crab, or Lobster<br>Biryani. To maintain our focus on perfecting biryani, we do not<br>offer any other menu. We invite you to experience this special dish,<br>infused with Osawa's passion and expertise.

A Fusion of Passion and Science

Takamasa Osawa

Takamasa Osawa, the mastermind behind Biriyani Osawa, first fell<br>in love with biryani during his student years in India. Driven by<br>a philosophy he calls "Biryani or Die," Osawa immersed himself in<br>research, honed his skills at Indian restaurants, and eventually<br>opened "Biriyani Osawa." He approaches biryani with a scientific<br>mindset, meticulously analyzing ingredients and cooking techniques<br>to achieve perfection. This blend of passion and science<br>culminates in what he proudly presents as the ultimate biryani.
